Chatti pathiri is a layered pastry popular in Kerala’s North Malabar and Malabar regions. It’s available in both sweet and savory flavors. Instead of pasta, pastry sheets/pancakes made with flour, egg, oil, and water are used in this dish, which is similar to Italian lasagna. The filling is determined by the desired variation. The sweet ones are made with cardamom-seasoned sweetened beaten eggs, nuts, and raisins. The savory ones are packed with the same meat filling as samosas or savory puffs. The flour is kneaded into a fluffy dough and thin pancakes are rolled out. These pancakes are softened by being soaked in milk and layered.
